While Eclipse restaurant at Huntsville’s Deerhurst Resort is certainly cavernous, it’s the huge windows overlooking picturesque Sunset Bay that make the place so memorable.
Deerhurst is quite rightly proud of its own homegrown produce. So much so that such delicacies as maple syrup, honey, shiitake mushrooms and herbs – all grown here – regularly appear on its menus, along with foraged seasonal ingredients including wild leeks, sumac and cat tails.

Executive Chef David Baker and his team also work with more than 20 area suppliers to ensure guests dining at Eclipse, the resort’s fine dining establishment, are offered as much local food as possible. Regular menu highlights include smoked Milford Bay trout and Ontario pickerel or locally raised rack of lamb.
